Recipes

Erin recently made our family the MOST delicious chicken, corn & potatoes dish (all-in-one type thing, perfect for busy moms)... She sent me the recipe, so I thought I would share...

"Delicious" Chicken Recipe
 
preheat to 375 degrees
 
  • pour 3 tablespoons of melted butter or margarine into bottom of 9x13-inch pan
  • layer 3 cups of thinly sliced peeled potatoes (usually 3 or so medium potatoes) into bottom of pan
  • layer 1 - 16 ounce package of frozen corn on top of potatoes
  • sprinkle 1 teaspoon salt & 1 teaspoon basil over potatoes/corn
  • In small bowl, combine 1 cup graham cracker crumbs with 1 teaspoon salt & 1 teaspoon basil, then transfer mixture onto a plate
  • dip boneless, skinless chicken breast (4 to 6 total) in 1/3 cup melted butter, then roll in crumb mixture, coating completely.
  • place chicken over vegetables
  • cover and bake 60 - 75 minutes (I bake for 60 minutes) or until chicken is done & veggies are tender.
  • remove from oven, uncover, and bake 10 minutes more to brown chicken.

makes 4 to 6 servings
